I always give myself four gifts for my birthday: learn something new, read a book, bake something new and dinner out.

This year since the election was on my birthday I volunteered to help count absentee ballots as my ‘something to learn’ gift. I was super excited about helping out with democracy. Sad for me, but good for democracy, they got all the ballots counted before my shift. So, I don’t get to learn how the process of counting the absentee ballots actually worked.

I get credit for volunteering I guess, but I didn’t get to learn much. 😔

I have been craving Chinese food for months. I have a late flight today so it was a great find before boarding on the plane. I’m always so grateful when I can find an actual gluten-free meal at the airport.

I got beef and broccoli and upgraded to fried rice — it’s been easily 5 years since I’ve had fried rice from a restaurant.

The meal was a bit pricy, but it’s easy 2-3 portions so I have food for before the flight, during the flight and maybe some for a late night snack when I get home if I want it.

This place is amazing!! All my gluten free people need to go eat at Via 313. So good!!

We all loved our pizza. Even the dairy free cheese got high praise.

The dessert was a pizza crust topped with cinnamon, powdered sugar and maple syrup. We were all so full and yet couldn’t resist it.

They have restaurants in Texas, Utah and Colorado. Go. Eat there. It’s amazing!
