This is truly the Best Naturally Gluten Free Black Bean Salsa. This salsa is great served as an appetizer, on tacos, or with quesadillas.
The list of ingredients is very simple, but it combines to have such a lovely flavor.
We like to eat it plain with Tostitos Lime Tortilla chips. It is great on tacos, served up inside a burrito, scoop the salsa up with quesadillas or top some enchiladas as a finishing flavor.
This salsa goes much quicker with the chopper.
If hand chopping all of the items it takes me about 30 minutes to chop all the tomatoes and assemble the remaining ingredients.
If using the chopper I can get it down to about 15 minutes. I love the chopper and it has been such a good investment for me.
You can eat the Gluten Free Black Bean Salsa immediately, but it is best if it is allowed to sit for 30 minutes.
The salsa refrigerates well but should be eaten within 5 days.
Best Naturally Gluten Free Black Bean Salsa
Ingredients
- 8-10 roma tomates, diced
- 1 onion, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- ¼ cup cilantro, chopped
- 2 tablespoons red wine vinegar
- 1 lime, juiced
- 1 teaspoons salt
- 1/4 teaspoon pepper
Instructions
- Dice the tomatoes and add to a large bowl.
- Dice the onion and add to the bowl.
- Drain and rinse the beans. Drain the corn. Add both to the bowl.
- Add chopped cilantro, vinegar, lime juice, salt and pepper.
- Give everything a big stir. Taste a bit. It may need more salt or pepper, adjust to your personal preferences.
