I’ve been making this recipe for over 20 years. It’s one of the first things I will choose for potlucks and picnics. The cookies are so easy to make I’ve taught countless church groups and teenagers how to make them for themselves.
I use any standard gluten-free one-to-one flour for my cookie baking. Usually, I use Namaste flour for cookies. I can get Namaste flour in bulk at Costco at a very reasonable price. But Measure for Measure by King Arthur flour works really well too. You can use any one-to-one gluten-free flour substitute you prefer.
For those that can eat gluten: simply use regular all-purpose flour in place of gluten-free flour.
This recipe contains oats. Make sure that the oats you use are gluten-free if needed.
The most important step to make these cookies turn out as the best chewy oatmeal gluten-free cookies you have ever eaten is to cream the butter, sugar, and eggs until light and fluffy. The color will go from a dark brown to a light golden color when you have mixed them enough.
These cookies will spread when they bake, so make sure not to crowd them together on the pan.

The Best Chewy Oatmeal Gluten-Free Cookies
Ingredients
- 1/2 cup butter, one stick
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tablespoon vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup gluten free 1:1 flour (or regular all-purpose flour)
- 3/4 cup oats
- 2 cups chocolate chips
Instructions
- Preheat oven to 400. Line three cookie sheets with parchment paper.
- Mix butter and sugar until light and fluffy.
- Add egg and vanilla. Mix until the mixture turns a light caramel color. This should take 3-4 minutes.
- Add baking powder, baking soda, salt, flour, and oats. Mix until combined.
- Add the chocolate chips. Mix until combined.
- Place on cookie sheet in tablespoon size scoops. The recipe will make about 30 cookies.
- Bake at 400 for 7 minutes.
