The only tricky thing about making these cookies is to make sure you cream the butter, sugar, and eggs until light and creamy.
The color should get much lighter from the beginning until when you stop mixing. The picture on the left shows what they look like after the ingredients have been added to the mixer and the one on the right shows when the cookie dough is ready to add the remaining ingredients.
I used a standard one-to-one gluten-free flour. I usually use Namaste flour for cookies, but King Arthur Measure for Measure is another great option.
If you can eat wheat flour, simply use all-purpose flour in place of the gluten-free flour in the recipe below.

The Best Gluten-Free Chocolate Mint M&M Cookies
Ingredients
- 2 cups gluten free one-to-one flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup cocoa powder
- 1 cup butter, room temperature
- 1 cup sugar
- 1 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2½ cups mint M&M's
Instructions
- Preaheat the oven to 350 degrees. Line three baking sheets with parchment paper.
- In a bowl combine flour, baking soda, baking powder, salt and cocoa powder. Mix.
- With a mixer or another large bowl, combine butter and sugar until smooth. Add the eggs and vanilla. Mix until light and fluffy and visibly changes color.
- Add dry mixture and mix until just combined.
- Gently add in the mint M&M's.
- Portion into balls. Leave two inches between cookies. Roll to smooth out the rough edges. You can add additional M&M's on the top if desired.
- Bake for 10 minutes. Let cool on the baking sheet for at least 10 minutes.
